Scotch Shortbread Cookies
- Brendan’s Grandmère’s recipe (Constance Houle, née Deschamps)
Ingredients
- ¼ pound butter (1 stick)
- ⅓ cup sugar
- 1 cup flour
Directions
- Cream butter and sugar until light and fluffy. Gradually add flour. Note that dough will be very stiff.
- Pat dough into 7x10 pan or iron skillet.
- Bake at 350° for 17 minutes until golden. Do not brown.
- Turn out onto paper towel or brown paper and cut into squares or fingers immediately.
