Flaxseed Oatmeal Pancakes

Ingredients
⅓ cup whole wheat flour
3 Tbsp quick-cooking oats
1 Tbsp flaxseed
½ tsp baking powder
¼ tsp ground cinnamon
⅛ tsp baking soda
Dash salt
1 large egg, separated, room temperature
½ cup buttermilk (can sub ½ cup milk + ½ Tbsp lemon juice)
1 Tbsp brown sugar
1 Tbsp neutral oil
½ tsp vanilla extract
Directions
In a large bowl, combine the first 7 ingredients.
In a small bowl, whisk the egg yolk, buttermilk, brown sugar, oil, and vanilla; stir into dry ingredients just until moistened.
In a small bowl, beat egg white on medium speed until stiff peaks form. Fold into batter.
Pour batter by ¼ cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown.
