Flaxseed Oatmeal Pancakes

Ingredients

  1. ⅓ cup whole wheat flour
  2. 3 Tbsp quick-cooking oats
  3. 1 Tbsp flaxseed
  4. ½ tsp baking powder
  5. ¼ tsp ground cinnamon
  6. ⅛ tsp baking soda
  7. Dash salt
  8. 1 large egg, separated, room temperature
  9. ½ cup buttermilk (can sub ½ cup milk + ½ Tbsp lemon juice)
  10. 1 Tbsp brown sugar
  11. 1 Tbsp neutral oil
  12. ½ tsp vanilla extract

Directions

  1. In a large bowl, combine the first 7 ingredients.
  2. In a small bowl, whisk the egg yolk, buttermilk, brown sugar, oil, and vanilla; stir into dry ingredients just until moistened.
  3. In a small bowl, beat egg white on medium speed until stiff peaks form. Fold into batter.
  4. Pour batter by ¼ cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown.
