Uncle Frank’s Chicken Parmesan
Ingredients
- Chicken Cutlets
- Italian Breadcrumbs
- Shredded Mozzarella Cheese
- Tomato Sauce
- Garlic or Garlic Powder
- Olive Oil
- Eggs
- Milk
- Salt and Pepper
Prepare the Chicken
- Soak chicken for 10 minutes in water and a little vinegar.
- Split the pairs of breasts, and slice them laterally to more evenly cook them.
- Trim the fat.
- Rinse the breast in water.
Prepare Breading
- Whisk two eggs, a touch of milk, and a little salt and pepper in a bowl.
- Spread seasoned breadcrumbs across a plate.
- Add a sliced clove of garlic or garlic powder to the breadcrumbs.
- Submerge each chicken in egg bowl, then coat in breadcrumbs.
Fry
- Coat frying pan with olive oil.
- Cook each cutlet over a medium flame, flipping after 1.5 minutes.
- Should be done in 4-5 minutes.
- Put a paper towel over a plate to absorb the grease of the fried chicken. If stacking chicken, place paper towel between each layer.
Bake
- Place chicken cutlets on cookie sheet.
- Sprinkle cutlets with cheese.
- Bake until cheese melts, which is probably about 4 minutes at broil temp.
Sauce
- Meanwhile, get the sauce warm by cooking over a low flame in a covered pot.
- As long as you STIR FREQUENTLY, you can keep this going for half an hour or so.
