Adapted from Food Network Old-Fashioned Banana Cake
This recipe reminded us of the famous banana cupcake from Billy’s Bakery in Chelsea
Ingredients
3 very ripe bananas, mashed
¾ cup granulated sugar
½ cup light brown sugar, lightly packed
½ cup vegetable oil
2 extra large eggs, room temperature
½ cup sour cream (can substitute greek yogurt)
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
½ tsp Kosher salt
Directions
Preheat the oven to 350° F. Fill cupcake tin with liners and set aside.
In a large bowl, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, and vanilla. Mix until smooth.
In a separate bowl, sift together flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined.
Pour ¼ cup of batter in each cupcake liner and bake 15-20 minutes, until a toothpick inserted in the center comes out clean.
Once cupcakes are cool enough to handle, transfer to a cooling rack. Cool completely before frosting.
