This recipe is adapted from the “Applebee’s Oriental Chicken Salad” recipe posted to lilluna.com
The Kreyers have always loved the Oriental Chicken Salad from Applebee’s. But as we’ve become more aware of calories and ingredients, I’ve looked for an alternative that we can make at home. The dressing is spot on.
Consider adding crispy chicken and mandarin oranges for more substance and flavor.
Ingredients
Dressing
3 Tbsp honey
1 ½ Tbsp rice wine vinegar
¼ c mayonnaise
1 tsp dijon mustard
⅛ tsp sesame oil
Salad
4 c romaine lettuce, chopped
½ c red cabbage, chopped
½ c napa cabbage, chopped
1 carrot, shredded
3 Tbsp sliced almonds
Directions
Add all dressing ingredients to a mason jar, seal tight, and shake to mix. (Can mix all ingredients in a blender if easier.) Refrigerate until ready to serve.
To prepare your salad, combine the romaine, red cabbage, napa cabbage, and carrots in a bowl. Sprinkle with almonds and top with dressing before tossing.
